As much as I love to spend time in the kitchen cooking and baking from scratch, I do not underestimate the power of quick and easy recipes. It’s always a good idea to have a well-stocked “tin” of recipes you can pull together when time is minimal. Bonus points if they’re also nutritious.

One such recipe is this Chicken with Lime and Avocado Salsa that’s currently on repeat in our house. In under 30 minutes, you can have juicy chicken breast fillets topped with a fresh and flavorful salsa on the dinner table. Filling and guilt free. My kind of dinner!

How to Make Chicken with Lime and Avocado Salsa

Start by sautéeing the chicken breast fillet. Cook the breast in a greased pan over medium heat. Once the side is opaque halfway up and the breast has a golden brown crust (on the heat contact side), flip and repeat.

 

At this point, the outside of the chicken looks cooked, but the inside is still uncooked. In order to cook the inside without drying out the chicken, follow my pro-tip: cover the pan and reduce the heat to low. Continue cooking until the internal temperature reaches 165°F, when a meat thermometer is inserted into the thickest part of the breast.

Covering the skillet, traps in heat quickly cooking the center of the breasts without overcooking/over drying the exterior area that’s already cooked. This method also seals in the juices, so no more overdried white meat!

Once the chicken is cooked, make the avocado salsa by combining diced tomatoes, onions, jalapeno, and avocado. Add lime juice, salt, and pepper to taste.

To serve, spoon the salsa over the cooked chicken, garnish with chopped cilantro and serve with lime wedges.

We like to save any leftover salsa to have as a snack with tortilla chips on the days that follow.

Ingredients

  • 4 Foster Farms DORI™ Chicken Breast Fillets
  • Salt and ground pepper to taste
  • 3-5 tablespoons extra-virgin olive oil, divided
  • 3 large ripe avocados, diced
  • 1 large tomato, seeded and diced
  • 1 medium red onion, sliced into thin strips
  • 1 jalapeño pepper, seeded and diced
  • 3 tablespoons fresh lime juice
  • ¼ cup packed fresh cilantro leaves, chopped
  • Lime wedges for serving

Instructions

  • Place the breast fillets on a large plate and season the top side with salt and pepper.
  • Heat two tablespoons of olive oil in a large skillet over medium heat until shimmering. Working in batches, if necessary, place the breast on the hot skillet, seasoned side down. Season the top side with salt and pepper. Cook for 2-3 minutes, until the sides are opaque about halfway up. Flip the breast and repeat. Cover the skillet and continue cooking for 1-2 minutes*, until the internal temperature reaches 165°F, when a meat thermometer is inserted into the thickest part of the breast. Repeat with the remaining breasts, using an additional 2 tablespoons of oil, if necessary.
  • Place the cooked breasts on a clean plate and tent with foil to keep warm.
  • In a medium bowl, add the remaining 1 tablespoon of oil with the avocados, tomato, onion, pepper, and lime juice. Use a small spoon to gently toss the mixture to combine, being careful not to crush the avocados.
  • Spoon about half of the avocado salsa over the chicken breasts and sprinkle with cilantro leaves. Serve with lime wedges, tortilla chips, and remaining salsa.

Notes

*Pro-tip: Covering the skillet traps in heat, quickly cooking the center of the breasts while sealing in the juices. No more over dried white meat!

      That’s the calorie count for all 4 breasts and all of the salsa. For one breast with about a quarter of the salsa, it’s approximately 590 calories :D
