Vanilla Creme Cakelettes ~ Soft and moist individual cakes topped with a PEEPS® heart. No frosting needed!
My contributions to Valentine’s Day 2016 is winding down. My hope was to help make your Valentine’s Day a little sweeter with thoughtful, easy, yet impressive treats. Today’s vanilla crème cakelettes is the last of the Valentine’s Day treats series for this year and we’re going out with a bang!
Since I already included a chocolate treat, I wanted to add a vanilla treat, in case there are any chocolate averse readers out there (gasp!). Rather than add another cupcake recipe to the interwebs (nothing wrong with cupcakes, I still LOVE them), I opted to think outside the box a little bit and decided to dust off my tartlette pan, which I haven’t used since July to make the Cannoli Tartlettes.
I had picked up some cute Peeps Vanilla Crème Marshmallow Hearts a while back and I wanted to incorporate them too! To keep it simple, I merely placed them on the batter and baked them. When I tested this I had no idea how they would turn out (life of a recipe blogger!), but I tried anyway and was thrilled by the results!
The cake batter did not leak from the bottom of the tartlette pan, which was a definite possibility. And, the marshmallows did not turn into a puddle, another definite possibility. The marshmallows simply slightly expanded to fill the surface area of the cakelette while also holding their shape. I couldn’t have asked for a better test result.
The cakelettes are of the soft and moist variety and the marshmallow hearts add a boost of vanilla flavor that also makes for a fabulous topping – no frosting needed!
Although the recipe makes 4 cakelettes, I would categorize them in the Desserts for Two Series because 1 cakelette is simply not enough.
I hope I was able to make your Valentine’s Day a little sweeter. If you missed any of my other Valentine’s Day treats, find them below:
