Just in time for summer, this Strawberry & Avocado Summer Fruit Salad is refreshing, nutritious, and tastes just like nature’s candy.I’ve always enjoyed fruit salads. They’re colorful, nutritious, and a great way to enjoy a variety of fruits. And, they’re especially refreshing during the summer months when you need a guilt-free treat to cool you down.

When I found myself with a surplus of rapidly ripening fruits (strawberries, mangoes, bananas, and avocados) one day, I had to act quickly. And, what’s quicker than a fruit salad? Peeling and chopping are essentially all that’s required.

Just in time for summer, this Strawberry & Avocado Summer Fruit Salad is refreshing, nutritious, and tastes just like nature’s candy.Although I had my doubts of adding in the avocados, I was pleasantly surprised to find that they and the bananas added a light and creamy coating to the salad. For maximum fruit juice extraction, I added a drizzle of blue agave nectar. The sugar from the agave draws out the water content from the fruits, essentially creating an innate delicious dressing. If I had to describe this Strawberry & Avocado Summer Fruit Salad in two words, it would be “nature’s candy” :D

Because we’re dealing with fresh fruits, natural browning/oxidation begins the moment the fruits are cut into. The Strawberry & Avocado Summer Fruit Salad is best served the same day it is made. At the absolute latest, 1 day after, but even then, a lot of browning will already have occurred. So, if you end up with leftovers like I did, you can freeze the rest and add a couple scoops to your fruit smoothies, which is what I did! No food waste in this kitchen ;)

    Love the bright tropical colors this fruit salad brings! I love the idea of freezing them before they turn brown and serving them as a shake. I might do those to my ripening avocados tonight! How refreshing!!!!!
