A cake for all occasions, this Blackberry Coconut Cake has a dense and moist crumb of blackberries and coconut, is filled with rich coconut buttercream, and frosted with tangy cream cheese frosting. Perfect for berry and coconut lovers everywhere.
I turned 30 earlier this year. And, rather than sit around in angst, hoping that the day would not come, I decided to throw myself a party and bake my own birthday cake. I had a wonderful floral and spring-themed party, complete with cheese fondue and chocolate fountain :)
Yes, I did bake my own birthday cake because I am who I am and that’s what I do! My sweet Warren offered to bake a cake for me because he didn’t think the birthday girl should be baking her own cake, but I respectfully declined the offer (butter and eggs are not for wasting :D).
I thought long and hard about what kind of cake I wanted to bake for myself and came up with this luscious blackberry coconut cake. Read the rest of the story over on SoFabFood, where I share the recipe for the cake, coconut buttercream filling, and tangy cream cheese frosting, along with my tips for baking a successful cake (if you’re a first timer).
This is actually one of my favorite cakes you’ve ever made. Reminds me of the chilled cake from Jillian’s event that I was so obsessed with, remember? Kudos, chica!
:D Yep! Especially when it’s cold ;)
This is too beautiful and sounds delish! LOVE coconut and blackberries. Belated Happy Birthday, btw :-) Would love to feature this post on a future HUNGRY FRIDAY feature! If it’s okay, we would like to use one of your photos and link back to this post.
Still droolin,

Oh the blackberry coconut cake made my mouth water. Next time you make it, please drop by some for me, I am not much of a baker.
Thank you! It was so much fun to make :D I will definitely drop-off a slice or two next time I make it ;)
